Black Bean & Sweet Potato Enchiladas

Ingredients
- ✓8 corn tortillas
- ✓2 cups mashed cooked sweet potato
- ✓1 can black beans, rinsed
- ✓2 cups red enchilada sauce
- ✓1 tsp chili powder
Instructions
- Mix mashed sweet potato with black beans and chili powder.
- Dip each tortilla in a little enchilada sauce to soften it.
- Fill tortillas with the mixture, roll up, and place in a baking dish.
- Pour remaining sauce over the top and bake at 180°C for 20 minutes.
